Flatbread & Mezze workshop
In 2014 e5 began running workshops for female refugees. An unexpected part of the course has been our learning about traditional breads from other parts of the world, for example the Turcoman flatbread. We began serving this, along with middle eastern mezze dishes at pop up events employing the refugee team. This has evolved into the new e5 roasthouse; a cafe and coffee roastery at Poplar Union.
Here we bake hundreds of flatbreads a week in a pizza oven, supplying a stall at Borough Market and to serve with our mezze menu.
For this course we invite you down to the roasthouse to join the team for a fun evening learning how to make sourdough Turcoman flatbreads and a selection of mezze dishes.
The class will give you an introduction into sourdough; how to create and maintain a starter, and use the leaven to prepare your flatbread dough. You will learn how to mix and shape the dough and will get a chance to bake your breads in a traditional pizza oven.
To accompany your sourdough breads, you will also learn how to make a collection of mouth-watering mezze dishes. An ancient tradition, mezze is a big part of dining experience in Eastern Mediterranean and Middle Eastern countries combining hot or cold, vegetarian or meat items.
SAMPLE MEZZE, PLEASE LET US KNOW IF THERE ARE PARTICULAR DISHES YOU WISH TO LEARN AND WE WILL TRY AND INCORPORATE:
Labneh, hummus, beetroot borani with dukkah, spicy chickpea or fava bean falafel, kisir, Levantine tabouleh, babaghanoush, haydari, mutabal, muhammara, dolma.
After baking your breads and mezze settle down for a communal dinner & drinks to sample the fruits of your labour.

Bookings cancelled more than 14 days prior to the start of a course will be refunded. Alternatively you may transfer to another date free of charge.
Bookings cancelled within 14 days of the start of a course are non-refundable and non-transferable, the only exception being if we are able to refill your place. If we are able to do so a full refund will be given, or you may transfer to another date.
