This class is designed for those who have already taken our Sourdough Breadmaking class, or are confident home bakers looking to further their skills and knowledge of sourdough.
Following on from our original bread class, the e5 bakehouse Advanced Sourdough class offers you the opportunity to consider various aspects of sourdough baking in depth.
During this class you’ll learn the secret to making our popular hackney wild, a high hydration 100% heritage wholemeal loaf, and a sourdough Greek flatbread. Each one of these loaves uses a different sourdough leaven and gives an opportunity to better understand how they affect the flavours and textures of your sourdough. You’ll also learn how to incorporate porridge and sprouted grain into your loaves.
We’ll consider and discuss some further baking issues such as different milling techniques, the importance of organic farming, working with heritage grains, and understanding baker’s percentage and their use.
The course will be led by one of our experienced bakers and offers an opportunity for students to engage with them on issues, obstacles and difficulties they’ve encountered in their own sourdough baking experiences.
The class costs £150 for the day and includes a sourdough “mother”, proving basket, recipes, e5 dough cutter, a light welcome spread, a large organic and seasonal lunch, cake and teas/coffee. And plenty of bread of course! You will also get 10% off in our shop if you’d like to buy any additional baking equipment, cook books or organic produce to take home.
It is suitable for regular home bakers with some experience of baking with sourdough. Bring a large bag with you for carting all of your breads home with you!

We appreciate that there will be circumstances whereby you will need to cancel your booking or change the date.
Bookings cancelled more than 14 days prior to the start of a course will be refunded. Alternatively you may transfer to another date free of charge.
Bookings cancelled within 14 days of the start of a course are non-refundable and non-transferable, the only exception being if we are able to refill your place. If we are able to do so a full refund will be given, or you may transfer to another date.
